One of the latest to follow suit is newly-opened Sky Bar at the green-focused luxury lifestyle destination, 1 Hotel Haitang Bay in Sanya, China. Addressing several eco-concerns, Sky Bar has launched a sustainability-centred cocktail menu celebrating the local ingredients and flavours of Hainan, while its culinary program is built around bringing diners back to nature, with its slow food and farm-to-table concept.
Naturally, local ingredients are at the fore, while one of its core eco-conscious initiatives is to reach zero waste in the near future. The menu features cocktails that shine a light on Hainan’s indigenous produce and flavours – with leftovers composted or used as food at the hotel’s farm – such as Farmer’s Delight with local fruits and Xinglong Tiki, with locally-grown organic coffee and spiced banana.
