A fresh face on the Abu Dhabi restaurant scene is Sole, an innovative new Italian eaterie at Conrad Abu Dhabi Etihad Towers. Under the apron strings of Chef Simone De Vivo, the Sole throws all the right adjectives at us − contemporary, relaxed, joyous − and doesn’t take itself too seriously, letting the “innovative, fun and flavoursome” food join in the fun.
Sole’s love of life shines through its food, too, with signature dishes flaunting catchy names, like ‘We’ve twisted a classic’ − double dough ravioli, spinach, butter-poached mazzara prawn and artichoke crisps; ‘A Poor Marriage’ − pasta potato, veal pancetta, smoke provola, reggiano cheese and black truffle; and ‘What A Catch’ − a heavenly combination of poached seabass, herbs, roasted garlic and fresh tomato broth.
