A “beautiful edible truffle” was unearthed at Yarra Valley in Victoria, Australia, tipping the scales at 1,511 grams. The find is believed to be the largest documented black truffle, beating a previous French fungus by almost 300 grams. Farmer Stuart Dunbar dug up the record-breaking truffle from his land – a volcanic red soil truffle farm where the delicacies are left to ripen, although no fertilisers or herbicides are used.
Sadly the celebrations may have been short lived since Dunbar was unable to find a buyer. “My regular customers had already taken truffles for the week,” he told the press, adding that he will instead pickle truffle in vodka to keep it as one piece. Black truffles are typically at their best for up to five days after being unearthed from the root system of a tree.
