This March marks the first ever Caviar Month at The Setai Miami Beach, where guests visitors can dine on some the finest salt-cured fish-eggs in the Sunshine State.
For March 2015 The Setai Miami Beach introduces ‘Caviar Month’ for its guests and visitors. The Restaurant and The Setai Grill are both presenting the Caviar Cart by Petrossian, with an indulgent range of options that include Tsar Imperial Kaluga, Royal Shassetra Schrencki and Hackleback.
All of the varieties can be paired with Champagne or a select range of vodkas, with a little help from the hotel’s in-house mixologist. There’s even a specially curated menu of recommended cocktails, although none of the drinks actually include caviar.
However, a ‘spherification’ process is used to create caviar-sized spheres that pop in the mouth. The technique was pioneered by Ferran Adrià at el Bulli in 2003, who ‘spherified’ melon juice to give it the appearance and texture of caviar.
Cocktails include the Elegant Double Beet, complete with Grand mariner 100 year Anniversary, Boulevader with golden raspberry caviar and the Golden Crane with saffron shrub.
