Distinct experiences are offered on the separate levels, with the sushi bar and restaurant taking up the basement and ground floors, and Kuro Kisumé – a space featuring private dining, a unique omakase experience, and the Chablis Bar – occupying the first floor.
The gallery-like restaurant showcases work from acclaimed Japanese and
Australian photographers amid a minimalist palette, but make no mistake –
it’s the food and drink that take centre stage. Bringing in Eleven
Madison Park’s Jonathan Ross as group sommelier, there will be plenty to
discuss when mulling over the options on the vast Kisumé Winewall, and
the kitchen hosts equally prestigious talent with master chef KS Moon
and the Hatanaka brothers sushi masters, Yosuke and Shimpei.
With just about 100 per cent of the menu created from Australian and New Zealand produce, it’s a unique and authentic mixture of cultures that is worthy of obsession.
