The Unbound Collection by Hyatt is set to significantly increase its presence in the Americas over the next two years, with a string of distinct new properties. Each of the hotels and resorts that make up the collection is unique; an assembly of iconic hotels united by colourful histories.
The Chicago Athletic Association is a case in point. After 125 years as an athletic club in the heart of Chicago’s business and cultural district, the property was turned into a hotel in 2015 and joined The Unbound Collection in November last year. Today, the 241-room hotel retains the character of its former incarnation with a busy programme of events that includes pop-up roller skating nights in the vintage style gym and cocktail workshops in the Prohibition era themed Milk Room.
January saw the opening of Carmel Valley Ranch, a 500-acre all-suite resort on California’s Monterey Peninsula that distils a sense of local history through activities such as cheesemaking workshops, falconry shows and hatchet throwing, as well as a treetop spa, seasonal restaurant and its own vineyards.
A short drive south, Mar Monte Hotel will capture the spirit of star-studded Santa Barbara when it opens its Spanish hacienda style doors; the 144-room Hotel Kansas City will breathe new life into a landmark property in Missouri when it opens later this year; and a 64-room boutique hotel in Hollywood will be restored to its former glory by 2021.
Beyond the US southern border, The Unbound Collection will welcome its first Central American property in 2021 when work is complete on Hotel La Compañia in Panama City. Situated in the heart of Casco Viejo, Panama City’s UNESCO-listed Old Town, the heritage property will feature 88 rooms along a charming street adjacent to the ruins of a Jesuit mission.
