With 10 restaurants already under its belt, Waldorf Astoria Maldives Ithaafushi would be forgiven for resting on its laurels. But instead, the Indian Ocean property has made news with the recent opening of Shimizu, the hotly-anticipated modern Japanese restaurant. Under the trained eye of head chef Andrei Palm (formerly of Nobu South Africa) , his artistry and creativity is brought to the fore, with a menu targeting, in particular, those with a refined palate and an appreciation for international cuisine.
Locally-sourced lobster and fish sit alongside high-end teppanyaki stations, with touches of Beluga and Cristal caviar, an interactive sushi bar alongside and an à la carte menu. Try the rock shrimp, seared Hokkaido scallop or the Maldivian reef fish sashimi for a deep dive into über-fresh produce from your Indian Ocean surrounds.
