But instead, the Indian Ocean property has made news with the recent opening of Shimizu, the hotly-anticipated modern Japanese restaurant. Under the trained eye of head chef Andrei Palm (formerly of Nobu South Africa) , his artistry and creativity is brought to the fore, with a menu targeting, in particular, those with a refined palate and an appreciation for international cuisine.
Locally-sourced lobster and fish sit alongside high-end teppanyaki stations, with touches of Beluga and Cristal caviar, an interactive sushi bar alongside and an à la carte menu.
