What inspired you to get into hospitality?
From an early age, I had a keen interest in the hospitality sector. My love for cooking, particularly desserts and baking, was nurtured through experiences with my grandmother. In my early teenage years, I began working part-time at a local restaurant, gaining experience in both front and back of house operations. The general manager, Jose, recognised my potential and offered me a full-time position to train as a chef, marking the beginning of my professional journey. I am profoundly grateful to him for this opportunity, as he saw qualities in me that I had yet to recognise, ultimately fostering my passion for the industry at such a young age.
Subsequently, I attended a catering college and spent time in France, specifically in a small town called Laval in the western region, where I trained in classical French cooking and service. Upon returning to the UK, I transitioned permanently to front-of-house roles, specialising in banquets and events. I also briefly served as a duty manager in a hotel, which provided me with insights into various hotel operations; however, my primary focus remained on events and event management.
After gaining substantial experience in the UK, I felt it was time to leave my hometown of Liverpool. I received an opportunity to relocate to the UAE for a short period, followed by a move to Muscat, Oman, where I joined the food and beverage team at The Grand Hyatt. From that moment onward, I was resolute in my commitment to advancing my career within this industry.
Who were your key mentors and what influence did they have on your career journey?
Throughout my career, I have been fortunate to have encountered a multitude of exceptional individuals within the industry who have left an indelible mark on my personal and professional development. Among these, Jose Alba stands out as the pivotal figure who recognised my potential and extended the initial opportunity that has since propelled me to my current position. Lesley Watson, my first Hotel General Manager, was an invaluable source of knowledge and influence, consistently challenging me and expanding my responsibilities, thereby enhancing my operational skills.
Another influential figure was Christoph Franzen, a distinguished gentleman and true hotelier, he has played a crucial role in shaping my character and approach to the profession. His emphasis on team development and the importance of a cohesive team has significantly influenced my work ethic. Furthermore, he imparted invaluable lessons on the essence of being a hotelier and the principles of operating within the hospitality industry. I strive to uphold the lessons he has shared with me. Adrian Stoppe was another remarkable individual. He has been instrumental in refining my skills and facilitating my transition from operations management to hotel management. His guidance and teachings have been enduring, and I continue to seek his counsel on a broad spectrum of topics even today. These individuals have collectively played a pivotal role in my professional growth, and I am profoundly grateful for their mentorship and guidance.
You are now with The Ritz-Carlton Ras Al Khaimah, Al Hamra Beach; what drew you to the brand and tell us about your role?
It is undeniable that working for The Ritz-Carlton is a highly desirable opportunity. The brand epitomises the essence of luxury hospitality. Specifically, The Ritz-Carlton Al Hamra Beach attracted me due to its exceptional location and intimate size. As a boutique property with only 32 pool villas, it allows us to focus intensely on guest experiences, enabling the creation of lasting memories. The rarity of such small luxury properties in the UAE, like those found in the UK or Europe, significantly enhanced my interest in this resort and what I am able to do moving forward on property.
What do you consider the most important aspects to any stay at The Ritz-Carlton Ras Al Khaimah, Al Hamra Beach?
Location, privacy and guest service constitute the essence of our offering. We are nestled in a prime location and boast one of the most Instagramable sunset spots in the UAE. Each of our 32 villas is meticulously designed to offer complete privacy, with landscaping that evokes the serenity of the Maldives or a hidden desert island. The level of service provided by our ladies and gentlemen is unparalleled, with experiences that rival those of the finest establishments I have encountered over three decades. Our staff is dedicated to ensuring that every guest receives an exceptional level of service, fostering an atmosphere of luxury and personalisation that is often lacking in larger establishments.
Sustainability is a major topic for all businesses around the globe; can hotels still offer a luxurious experience while maintaining a drive to be sustainable?
I believe it is inevitable that hotels worldwide will become increasingly sustainable as we move forward. However, I do think that there is a misconception that you cannot be sustainable when it comes to luxury travel. There are studies showing that the luxury traveller is prioritising sustainability when they plan their trips and around there is also a high volume of travels looking at how what they spend is going back into the local communities. I think it is very important that this happens; all luxury products need to work hand-in-hand with the local community. We have some amazing biodegradable bathroom amenities at The Ritz-Carlton, good quality products that match up the price point of the property and we will continue to implement more initiatives to drive sustainability through the property over the coming years.
Any exciting news or plans upcoming for The Ritz-Carlton Ras Al Khaimah, Al Hamra Beach that you would like to share?
We've just recently introduced an incredibly exciting new initiative, the “dine around” concept. It’s a first of its kind in Ras Al Khaimah. The initiative is designed to provide guests with an unmatched dining experience. We believe this concept will only keep raising the bar for our guests' expectations and experiences. The concept enables guests to now enjoy meals at up to 15 different dining locations, based at some amazing properties within the Al Hamra Village and Boardwalk, featuring a variety of cuisines including seafood, Japanese and French, within the vicinity, all within walking distance.
We have also just recently launched our new wellness programme at the report and new yoga and wellness studio. I believe that more consumers are incorporating wellness into their decision-making when choosing travel destinations. We now have that ability at the resort with our dedicated wellness guru on hand, to guide our guests through this process. You can enjoy individual treatments and sessions or you can book one of our one-or three-day wellness packages which will leave you rejuvenated and recharged after your sessions.
What is your definition of luxury?
Attention to detail, exceptional staff service and surpassing guests expectations are paramount. Among all the hotels and restaurants I have frequented over the last 30 years, the ones that truly stand out and remain memorable are those where the staff delivered outstanding service. When staff focus on small unnoticeable details that most people would miss, this is luxury!
When you’re not in the hotel, what do you like to get up to?
I thoroughly enjoy travelling around the UAE, exploring the lesser-known gems scattered across the Emirates. There are so many hidden treasures beyond Dubai and Abu Dhabi. Within an hour’s drive from Ras Al Khaimah, there are many locations which I like to see. I also like dining out and keeping up-to-date with the industry trends, even though it’s my downtime. Working in this industry means that you're never really off, so seeing what others are doing around the UAE is key.
Ras Al Khaimah has seen a surge in tourism over the past year; do you have any recommendations for guests visiting the emirate (restaurants, beaches, landmarks etc.)?
Ras Al Khaimah and its nearby regions offer a wealth of activities for families and couples alike. A drive along the mountain road to Jebel Jais is truly spectacular, providing breathtaking views of the UAE both ascending and descending. At the summit, you'll find the world’s longest zipline, stretching approximately 2,800 metres and allowing speeds of up to 150kph. Additionally, there's a charming restaurant at the top, perfect for enjoying a delightful afternoon or evening while watching the sunset over the mountains.
Also, located in the small fishing village of Al Rams, the cultural Suwaidi Pearls pearl farm is a fascinating destination for those looking to dive into the world of pearl farming. This spot is truly a must-visit for anyone travelling to Ras Al Khaimah. The emirate really does boast a remarkable variety of attractions, ranging from desert excursions and mountain treks to an impressive 64 kilometres of beaches and coastline. And with Dubai only 45 to 50 minutes away, a day trip to the big city lights can also be done.
If you could travel to one place tomorrow, what destination would that be and why?
A secluded chalet in the Scottish Highlands, where the open fire crackles and the wind howls outside. Completely disconnected from the outside world and off the grid - this is pure bliss!
