Aqua Restaurant / Bar, a new venue at JA Ocean View Hotel in Dubai’s Jumeirah Beach Residence is taking diners on a journey of discovery inspired by water, from its natural architecture that symbolises the flow of water that connects distant shores, to a menu that binds together flavour, culture and community.
True to its ethos, the team at Aqua Restaurant / Bar originate from nine countries and 28 different cities, injecting a little bit of their home into the dishes they prepare. The menu is curated to do the same, to bring people together over a shared love of food, whilst taking each individual on a culinary odyssey across a symphony of international flavours.
Themed nights allow the kitchen to really delve into the culinary tapestry of a country or region, celebrating both history and ingredients on the plate. On Tuesday, a Mediterranean Mosaic: A Journey Through 7 Shores, takes you from the freshest catch from the coast to vibrant harvests, with paella, fresh pasta and traditional tiramisu. And on Wednesday, Silk Road Fusion: From Moscow to Tokyo weaves together the culinary treasures along the Silk Road route, in which you can feast on Peking duck, Singaporean chili crab and dishes from a live sushi and sashimi bar.
You’ll also journey across the Middle East on Thursdays for Arabian Nights: Flavours of the Levant, which takes you to the heart of Arabian tradition and hospitality, where age-old recipes harmonise with the region’s heritage. While Sundays are saved for The Great Royal Roast, for which chefs have scoured the globe for roasting inspiration, with beef Wellington, Australian leg of lamb and classic British pies all paired with smokey spices, bold marinades and all the trimmings, of course.
If you’re looking for an interesting way to spend your Saturday, you can also book the Sabor Latino Brunch, which celebrates the flavours of Latin America, such as Peruvian antichuchos de pollo, tuna ceviche and arroz chaufa, perfect for slathering with aji amarillo. The menu is served along with Latino-inspired live entertainment and on-site mixologists shaking up a selection of cocktails to complement the food.

Making sure nobody’s left out, the Sunday Family Table Brunch launches in December, complete with a kids’ corner and the best of Aqua Restaurant / Bar ’s shareable dishes for a fun, end-of-week get-together.
Inside, the restaurant lets the food take centre stage with a natural, calming décor of woods, cream banquettes and curvilinear suspended lights. A ceiling draped in greenery joins the dots from sea to sky, letting you sit back and go with the flow.
