You it’s time to say ciao to summer when restaurants start trotting out the truffle, and thankfully this year is no different. Yes, ladies and gentlemen... It is, indeed, truffle season. Ancient Romans believed that the truffle was created when lightning struck damp earth, and today they’re fondly known as ‘a fairy apple’ or ‘a diamond of the kitchen’, but however you know them, now is the time to eat them. One of Dubai’s best-loved Italian restaurants, Scalini – at Restaurant Village, Four Seasons Resort Jumeirah – is showing typical fanfare for the truffle tuber with its new Truffles & Spritz collection.
The menu features newly-imported white truffles from Alba alongside a new collection of sparkles inspired by the Amalfi Coast. In typical showstopping style, the white truffles will be masterfully shaved at each table by an in-house Truffle experts, lightly scattered over dishes that include Burrata di Andria – the Queen of cheese from Apulia Italy; white asparagus ‘Alla Contessa’ with Hollandaise sauce; Aquarello Parmesan risotto sourced from the Rondelino’s family estate in Piedmont; and clarified butter tagliolini prepared ‘Alla Scalini’ in a large Padano cheese wheel.
As for the Italian bubbles, Scalini’s new collection fuses intricate flavours, such as Floral made with fresh blueberries, violet and elderflower; Amaro, which blends Montenegrin tonic water with orange; and the Pesca, that refreshingly fuses peach, lemon and orange.
With the weather verging on ‘cool’, al fresco dining is all part of the truffle-tasting experience, with Scalini’s lush, green terrace the perfect place to settle in for the occasion. The White Truffle Menu starts at Dhs210 and is available for both lunch and dinner.
