This month, the spotlight shines on Aman Venice, inviting gastronomy fans to take a seat at the table and experience the culinary prowess of three Michelin-starred chef, Norbert Niederkofler, with a series of dinner events. The immersive evenings will showcase fresh produce sourced from the shores of the Floating City across a six-course ‘Cook the Lagoon’-themed tasting menu. A twist on Norbert’s ‘Cook the Mountain’ philosophy that originated from his St. Hubertus restaurant at Aman’s Rosa Alpina hotel, in which he uses ingredients sourced within the vicinity of the restaurant, it brings the chef’s environmentally-conscious practice to a new setting.
For Aman Venice, Chef Norbert will showcase ingredients found in the Veneto region, from delicious seafoods, such as scallops and grouper, to more unusual dishes, like glasswort, allowing guests to discover more about both Italian cuisine and inventive-yet-sustainable cooking practices over the course of the evening. To wash your six courses down, the experience can also be accompanied with a wine-pairing course by the hotel's sommelier, all served in the atmospheric setting of Aman Venice’s Palazzo.
The culinary event takes place over several dates this spring: March 22 and April 30. And those venturing to Venice from further afield can team their dinner with two-night stay, which includes breakfast, a complimentary mini-bar and a cocktail and cicchetti in the hotel’s iconic vaulted bar that overlooks the secret garden and Grand Canal.
