With this month’s opening of The Langham Jakarta, Indonesia welcomes British Chef Tom Aikens into the fold, as the doors open to his namesake restaurant, Tom’s. Plumped pretty on the 62nd floor of this beautiful edifice, the intimate European restaurant is full of design rich pickings: Italian mosaic flooring by Sicis, knoll chairs, leather-upholstered benches, old-world chandeliers and vast floor-to-ceiling windows that throw views over Jakarta’s Sudirman Centra Business District skyline.
In-keeping with the Michelin-star chef’s masterful approach to European cuisine, the menu draws on both his British roots and French influence courtesy of a youth spent in the country alongside his father who is a French wine merchant.
For someone with an eye on sustainability and best produce, his menu will consist of quality produce according to the season, through a highly-styled a la carte Gueridon service of meat carvings, burrata and desserts. Bubbly and cocktails will also be presented and prepared table-side.
The burrata trolley offers elevated interaction, stocked with the finest cheese from Pugliese, and on weekends there will be roast beef carved at the table ensuring a high-level of personalised service.
Tom’s will be helmed by Exec Sous Chef Giles Langford, an Aikens alumnus, who will stamp his mark on the restaurant through his love of organic ingredients and modern-classical French and Italian cooking, whilst also creating a rooftop eco-garden to grow fresh herbs solely for use in the restaurant.
The Marrone open-kitchen will showcase
the lively cooking process, as well as the Himalyan salt-dry meat lockers, the wood-fire grill and the épicerie.
