Chef Albert Adrià has launched “Cakes & Bubbles” at London’s Hotel Café Royal, following a successful pop up in 2016. Expanding his empire from the three-Michelin star elBulli, the sweet-toothed chef has developed a venue that blends tradition and modernity with a menu of classics such as egg flan with dark caramel and homemade doughnuts sit alongside a selection of specials such as airwaffles with caramelised banana and chocolate ninyoyaki cake balls round out the menu alongside traditional pastries.
Chef Adrià was voted The World’s Best Pastry Chef by The World’s 50 Best Restaurants and the opening of his Cakes & Bubbles venue follows on from the unveiling of Ziggy’s, a bar that pays homage to one Hotel Café Royal’s most renowned past patrons, David Bowie.
