As London flits between various levels of lockdown, The Goring Hotel’s Michelin-star chef Richard Galli has timed a move to delivery-only restaurant, Poké the Bear, perfectly. He joins as Exec Chef, as the brand expands in London and locks in a new site in Manchester.
Having completely redesigned the menu, Richard brings his five-star cooking style and Brazilian influence to the traditional Hawaiian dishes, with braised octopus, cassava chips, sesame crusted teriyaki chicken and seabass ceviche bowls. “Over the past 15 years I have dedicated my life to fine dining. I’ve now got the opportunity to bring the knowledge and standards that I’ve learnt into this exciting fast food casual concept.” he says.
