Adding to Waldorf Astoria DIFC’s trio of eateries, The Artisan is bringing a new standard of Italian cuisine to this city central hotel. Under the capable eye of chef Luca Tresoldi, who previously worked at the three Michelin-star Florentine restaurant, Enoteca Pinchiorri, his menu makes use of cutting-edge creativity and craftsmanship, resulting in traditional dishes delivered in a contemporary way.
Paccheri pasta with veal ragu, slow-cooked beef cheek and sea bass fillet with black truffle and lime cauliflower puree will please discerning palates, while the soul-stirring experience of eating one of chef Luca’s 72-hour fermented pizzas, dressed in a smattering of truffles, Fontina cheese, potatoes and chive, will ensure diners keep coming back for more.
